Cashew Vanilla Coconut Bombs

Guest post by Elina from Bowls and Flows.

When hunger strikes, don’t settle for ordinary snacks: These Cashew Vanilla Coconut Bombs are your ticket to flavour paradise. Packed with creamy cashews and a hint of vanilla, they’re a taste explosion you won’t want to miss. Simple, super delicious and just the perfect snack for those snack emergencies before or after your yoga practice.

I love to coat the bliss balls with chocolate, but you don’t need to if this is too sweet for you!

Cashew Vanilla Coconut Bombs Recipe

INGREDIENTS (for 12 balls)
  • 6 tbsp cashew butter
  • 2 tbsp coconut cream
  • 2 cups desiccated coconut
  • 4 tbsp coconut syrup (or agave syrup)
  • 2 tsp vanilla
  • coconut flakes or sea salt flakes

optional:

  • 80 g dark chocolate
METHOD
  1. In a bowl, whisk together cashew butter, coconut cream, coconut syrup and vanilla. Add the desiccated coconut and mix until well combined.
  2. Form little balls with your hand and cover with chocolate (optional). Place the balls on a parchment paper, sprinkle with coco flakes or sea salt, put in the fridge for one hour and enjoy!

TIP

Cashew Vanilla Coconut Bombs can last in the fridge for about 1-2 weeks when stored properly in an airtight container. To maintain their freshness and quality, it’s a good practice to keep them refrigerated. If you want to extend their shelf life, you can also store them in the freezer, where they should remain good for several months. Just make sure to place them in an airtight container or sealable bags before freezing.
