Delicious Raw Food Crackers - easily prepared!

Make your own Raw Food Crackers with flax seeds, herbs and sun-dried tomatoes, olives or beets. They are super delicious and healthy and you can easily change the recipe according to your taste.
This is a base recipe that can easily be changed by you to suit your taste. Use olives, grated carrot, beetroot, seeds and nuts for interesting variations.

1 cup flax seeds, soaked in 2 cups water
1/2 cup ground flax
3 tbsp olive oil
2 medium tomatoes chopped
1-2 cup of sundried tomatoes, soaked and rinsed repeatedly to reduce the salt content
1 tbsp sun-dried basil
1-2 tbsp dried oregano
1-2 tsp Himalayan salt

Place soaked flax seeds in a food processor and operate until it becomes a paste. In a bowl combine the flax seed paste, ground flax and all the other ingredients. Put mixture back in food processor and process until homogenous.

With an offset spatula, spread the mixture across as many dehydrator teflex sheets as necessary to get your desired cracker thickness and dehydrate until the top is completely dry. Flip over onto the mesh sheet only and dehydrate again until crunchy.

If you don't have a dehydrator you spread the mixture across a baking paper and place it onto a baking tray. Switch the temperature as low as possible and observe the process. Flip to dry on both sides.
They keep in an airtight container for a couple of months.
